Spaghetti Night Recharge!

One zucchini can make 2 plates easily and packs a punch without adding a ton of calories, fat or sugar! It's rich in multiple antioxidants, like lutein and zeaxanthin. You can buy an inexpensive spiralizer at a home goods store or online and it's really easy to use without a lot of clean up. Go the fresh vs frozen route so the zucchini noodles don't get mushy. They are best if you just saute them in a little olive oil for a few minutes to get them softer, but don't go too long or they'll get mushy as well. Try it before you judge it! You can always do half zucchini noodles and half pasta if you want to meet us halfway ;)
