Healthy Chocolate Nut Butter Cups

Drool worthy AND healthier chocolate nut butter cup Halloween treat!! Make these this week in preparation for Halloween, you won't regret it! ๐Ÿ˜‹




Ingredients:

Chocolate Layer 1 cup Chocolate chips - I used @enjoylifefoods dark and semi sweet chocolate chips 1 tbsp Coconut Oil, melted

Nut Butter Layer 1/2 cup Nut Butter - you can use natural peanut butter, almond butter, cashew butter or even NutZo butter

1/4 cup Honey or Maple Syrup 2 tbsp Coconut Oil, melted

A pinch of sea salt


Line a sheet pan or muffin tin with baking cups. I used silicon baking cups in two sizes to make large and miniature chocolate cups. Combine chocolate chips and coconut oil in a bowl and heat over a double boiler or in the microwave just until melted. Spoon 1-2 tsps into each baking cup, enough to cover the bottom. Then place them in the freezer. While the chocolate is setting, add all of the ingredients for the nut butter layer into a bowl and heat until melted over a double boiler or in the microwave. You don't want this to cook, just melt to combine and stir together. Pull the chocolate cups out of the freezer (once they're set) and spoon the nut butter layer over the chocolate layer. Place back in the freezer, once set, cover the nut butter with the remaining chocolate and place in the freezer one last time. Once set you can pop them out of the silicon cups to see the delicious layers... yum!!


Pro tip: sprinkle the tops with flaky sea salt after you add the top layer of chocolate!
